So I heard about this new thing…baked kale chips. Like potato chips, but healthier. (Kale is a superfood dontcha know). I was intrigued. How could healthy, thick greens taste like potato chips? Well they don’t exactly…but that’s what everyone keeps saying and they’re pretty close. But really, I think they’re good enough on their own. Like you don’t even have to say, they’re almost as good as potato chips. It’s the foodie equivalent of saying you’re pretty good….for a girl. Kale chips, I think you taste great all on your own. Anyway, they are surprisingly good and it doesn’t hurt that they are super easy to make. There are a few variations of basically the same recipe. Here’s what I did.
1 bunch of Kale (I got the curly kind, unlike SK above)
Olive oil
Salt
Preheat oven to 350. Wash and dry kale. Dry well. Cut off large stems and spines, and then toss in a bowl with olive oil. 1-2 tbls. is all you need. Then add some salt. Go easy, you can always add more later. Then spread out on a cookie sheet in a single layer (I needed 2 cookie sheets for 1 bunch of kale). Bake for 15-ish minues, until edges are browned and kale is crispy. A lot of recipes said 10-15 minutes, but I think I did mine even longer….you really don’t want it chewy at all, so make sure to get that crispy crunch. Enjoy!

My mother-in-law made some over Conference weekend. It was her first try at them and all of our first taste. I hated them! Maybe we need to try it again with a little variation because those tasted like poisonous dead leaves.
My Pilates teacher told me about them, and said they were great. Will have to try them…. My favorite eatery closed and they had an amazing kale salad. It was delicious, and yes healthy. So sad!

I've actually made these! I used garlic olive oil and grated Parmesan cheese with sea salt. I thought they were good, but I couldn't polish off the whole pan by myself the way I could have with potato chips. :)It's a nice way to sneak in some greens without feeling like you're eating veggies.
Already like kale, so this would be another good way to eat it. Nice.
