I know I blogged about these last year… but I’m just not sure you guys took me seriously. A quesadilla with mango?? And Brie?? I know, but it’s crazy enough that it just might work. And it does. I’ve already had this little number 3 times in the past week and in the words of Depeche Mode, I just can’t get enough. This recipe comes from one of my favorite food blogs, and definitely my favorite vegetarian food blog, Fresh365. Once again here’s the recipe and once again I admonish you to try it:
Brie Quesadillas with Mango, Walnuts & Scallions
adapted from Rachel Ray . serves 4
8 whole wheat tortillas
1 small wheel Brie cheese (or Camembert), sliced
1/4 c walnuts, chopped
1 mango, peeled and sliced
4 scallions, chopped
pepper
olive oil
Preheat oven to 400F. Arrange four tortillas in a single layer on a baking sheet and cook 2 minutes, until they begin to brown. Place 5 or 6 slices Brie on the tortillas and top with walnuts. Cook 3-5 minutes, until cheese begins to melt and walnuts are toasted. Top with mango slices and all, except 2 T, scallions. Sprinkle with pepper. Cover each quesadilla with an additional tortilla. Cook 3 minutes, until top tortilla is golden brown. Let cool and cut into fours. Arrange on serving platter and top with a drizzle of olive oil and 2 T scallions.
Notes:
–I also like to drizzle a little honey in the middle, gives it just a touch more sweetness which I like.
–The oven is probably the best way to go, but I’ve also done this in a non stick pan on the stove with equally as good results–just make sure to flip the quesadilla so it gets warm on both sides.
–I get my brie at Trader Joes–good and inexpensive.
