Everyone needs a a few go-to, easy meals that can be made in 10 minutes or less and that no one complains about. I’m looking at you off spring. Time and time again a simple platter of fruit, vegetables, crackers, cheese, dips, salami and charcuterie gets a ringing endorsement from my family. Of course it’s never the same thing twice and it completely depends on what we have on hand–there are definitely some fan favorites–but this is a no-fail, easy dinner, we all agree on. Added bonus: it look beautiful.
First, just open the fridge and start grabbing stuff: berries, cherries, grapes, peppers, cucumbers, radishes, carrots, celery, apples, cheese, salsa, hummus, jam, pickles, salami, cold chicken and olives are some of my favorites. Then head to the cupboard or pantry and do the same. I usually grab rolls, crackers, chips, maybe peanut butter, and/or pita bread.
Start by grabbing a platter or tray and then add a few bowls of fruit and/or dips. Here I have some cherries, berries, hummus and lemon curd (which we ate on the rolls).
Now start arranging your other foods around the bowls.
Don’t forget your veggies! Also, I always try to have some protein by serving either meat, hummus. or both.
Seriously my kids love it! As long as I say, eat some veggies!, I’m not monitoring their food, they get to pick and choose what they want and everyone is happy.
